Five-ply construction, an 18/10 stainless cooking surface, no interior rivets, and the proprietary Silvinox electrochemical treatment that gives the polish its slightly silver-grey character. The 9.4-inch frypan sits between $150 and $200 depending on retailer and sale, which puts it at the high end of premium home stainless without crossing into the Demeyere Atlantis or Proline tier.

Each of those is a real claim with real materials science behind it, and each is also frequently overstated. What the pan actually is

The Demeyere Industry 5 9.4" (24 cm) frypan is a full-clad stainless construction made in Herentals, Belgium. The alloy stack runs five bonded layers from outside to inside:

The empty pan weighs around 2.5 pounds — heavier than a 3-ply pan of the same diameter and noticeably lighter than the cast-aluminum-cored Demeyere Atlantis. Oven safe to 500°F. Why 5-ply construction matters

Stainless steel is a poor heat conductor. The thermal conductivity of AISI 304 austenitic stainless is around 16 W/m·K, compared to roughly 237 W/m·K for pure aluminum. That is a 15-fold difference. A solid stainless pan, with no aluminum core, will develop hot spots above the burner and lag everywhere else. The fix is to bond a layer of aluminum (or copper) between two stainless layers — the food-contact stainless gets the corrosion resistance and the cleanability, the aluminum gets the thermal job, and the exterior stainless gets the magnetic induction compatibility plus the durable finish.

The ASM Handbook framing on clad cookware is that bonded multi-layer construction allows heat to conduct laterally through the aluminum core out to the pan side walls, producing measurably more even heating than disc-bottom or single-clad designs. The number of layers and where the aluminum sits in the stack determine how evenly the side walls heat with the bottom.

Three-ply construction (steel, aluminum, steel) is the entry-level full-clad architecture and what most premium stainless pans use — the All-Clad D3, the Cuisinart MultiClad Pro. The aluminum core conducts heat through the bottom; the side walls of three-ply pans heat slightly slower because there is less aluminum cross-section running up the wall. Five-ply construction (steel, aluminum, aluminum-alloy, aluminum, steel) adds two more layers of aluminum, which thickens the cross-section in the side wall and makes the wall temperature track the bottom more closely. The practical effect during a sear is that food at the edge of the pan browns at a similar rate to food in the center.

That is the materials-science argument. The actual improvement is real but bounded — five-ply is more even than three-ply, but not by an order of magnitude. For most home cooks the difference shows up most in two scenarios: a fond-building sear where the goal is uniform browning across the pan surface, and a long simmer where the side-wall temperature determines whether the sauce reduces evenly or scorches at the rim.

The 18/10 cooking surface

Demeyere uses 18/10 austenitic stainless on the Industry 5 cooking surface. In the European market, "18/10" is the consumer-facing label that maps to AISI 304-class compositions: approximately 18% chromium and 10% nickel by weight, with the higher nickel content giving the polished surface its non-magnetic shine and corrosion resistance. Some 18/10 alloys also include a small molybdenum addition that pushes them closer to AISI 316; Demeyere does not publish the exact molybdenum content for the Industry 5, and the practical kitchen behavior is similar to other premium 18/10 cookware.

The grade matters most for two reasons. First, corrosion behavior: 18/10 holds up to acidic foods, salt, and dishwasher cycles better than 18/8 (304 with the lower 8% nickel content) and decisively better than 18/0 (the ferritic 430 grade with no nickel). Second, leaching: more nickel in the alloy translates to more nickel in long acidic cooks. After six hours of simmering, nickel concentrations rose up to 26-fold over a glass control, and 316-grade pans leached more nickel than 304-grade pans across the test.

For most healthy adults this is not a concern. Adult dietary nickel intake from food sits around 220-350 μg/day, and even a generous serving from a long simmer in a broken-in stainless pan stays well under thresholds of concern. Cast iron or enameled cast iron is the standard alternative per allergy literature.

The honest framing for the Industry 5 cooking surface is "premium 18/10 austenitic stainless with the Silvinox surface treatment," not "low-nickel" or "low-leaching." Demeyere does not claim either, and any review framing it that way is incorrect. The FDA classifies stainless cookware as Generally Recognized as Safe for food contact, and that classification covers Industry 5 the same way it covers Cuisinart MultiClad Pro.

What Silvinox actually does

Silvinox is the differentiator Demeyere markets most aggressively, and it is also the part most reviewers describe inaccurately. Demeyere's own technical page describes the process as an electrochemical surface treatment that removes free iron from the very top layer of the stainless cooking surface, leaving an enriched chromium and silver-grey passive film.

In practice, three things change. First, the polish reads slightly cooler in tone — closer to silver than the warm-grey of an untreated 18/10 surface. Second, the surface resists heat-tint discoloration better — the iridescent rainbow patterns that develop on hot stainless surfaces show up less aggressively on Silvinox-treated pans. Third, the chromium-rich top layer is marginally more food-release-friendly than untreated stainless, which is what cooks describe as "less sticky."

What Silvinox is not: a non-stick coating. There is nothing to wear off. The treatment changes the surface chemistry of the existing stainless, not the bulk alloy underneath. A Silvinox pan still requires the standard stainless cooking technique — preheat the empty pan, add oil, wait for shimmer, add food, do not move it until it releases. Skipping the preheat will produce sticking on a Silvinox pan the same way it does on every other stainless surface.

The treatment also does not change the nickel content of the alloy. The bulk 18/10 chemistry is the same as a non-Silvinox 18/10 pan, and the leaching behavior in long acidic cooks is similar to other premium 18/10 stainless. Silvinox is a finish refinement, not a metallurgical upgrade.

No interior rivets — welded handle attachment

The Industry 5 handle attaches via flush welded studs on the exterior of the pan. The interior of the cooking surface is unbroken — no rivets, no lips, no crevices. This is one of the most frequently cited advantages in third-party reviews (America's Test Kitchen, Serious Eats, Prudent Reviews) when comparing Industry 5 to the All-Clad D3 or the Made In Stainless Clad, both of which use riveted handles.

Riveted handles are not bad. They are decades-old construction, mechanically sound, and on premium pans the rivets sit nearly flush. The cleaning trade is small but real — a riveted interior collects a thin film of oil and food residue around the rivet head over extended use, which requires Bar Keepers Friend or a soak to remove per manufacturer care guides. A welded interior has no rivet heads to collect residue around, and the surface wipes down to clean uniformly.

Care and warranty

Stainless requires the least maintenance in the cookware category. Hand-washing with hot water and a non-abrasive sponge keeps the Silvinox surface bright. Bar Keepers Friend handles stuck-on food and restores the finish if it dulls.
