Our take
Le Creuset enameled cast iron is the workhorse for anyone who wants the heat retention of cast iron without the seasoning ritual. Vitreous enamel is glass — fused to the iron at high heat — which makes the cooking surface non-reactive and dishwasher-safe (though hand-washing extends life). The Signature line has the larger handle and improved enamel. Premium price reflects the 100-year French manufacturing pedigree, but realistically these last several decades.
